Carmy is trying to set himself apart with the whole menu change so that they can appear more unique than other restaurants but if they're this chaotic before the service starts I can't imagine how it's going to be like at dinner time.

Carmy is doing too much, he's basically trying to speedrun getting Michelin star. Yes HE has worked for restaurants with stars but he was working alongside people with the same calibre. His employees literally JUST started to train to a higher level and still need time to get there. The restaurant hasn't even been opened for a proper service, has no local traction from local reviews or online ones. It makes his restaurant look it's going down the path of other young chefs that set themselves up for failure trying to get a star instead of putting priority on getting a proper kitchen and front of house service going with employees of a high calibre

You can tell that Carmy is drawing most of his inspiration from the asshole chef because he had the most impact on Carmy's chef career. When they first opened up the new restaurant Carmy imagined he was there and he's still using some of his tips such as not repeating ingredients.

The daily menu changes are actually at almost every fine dining multi-star restaurant. I live in California and was considering going to French Laundry. You go to their website and they give you their "daily menu" that changes every day (I decided not to go because I didn't want to pay, as I said before, minimum $375 for a meal that includes a dish of one inch meat and a baby carrot. And that doesn't even include wine pairing. My mom trained me at fine dining French and Chinese food myself so why am I paying essentially $60 for something that costs $8 in materials? Yes I get that the sauce took 3 hours to reduce and labor but damn.). Just give me my $80 all you can eat Fogo and I'm good 👍.

This was a great episode and Marcus was the star. The show started out great with the stress and clown shoes. Then Marcus walks in and everybody's heart sinks for him. Him and Carmy bonding in the end and Marcus being the only person 100% hyped for the non-negotiables was great. Them bonding over loss too was strong. I cried when Marcus said "she wanted me to be with y'all" and "Take us there, Bear" 😭 ❤️. Who knew that Lionel from Odd Future would be one of the strongest Emmy award winning actors out there?

The $175 for the 9 course is for the servers I think.. they said $175 plus tips so I'm assuming they mean each server gets $175 per 9 course serving plus whatever tips the customer leaves for them. I don't think they're charging $175 for a 9 course meal lol, Unc would never make his money back 😂

The idea of a new menu everyday is crazy especially since they literally just opened. I feel like it would make more sense once they already had some traction. But at the same time, look at the old customers who are mad about the sandwiches. I guess it makes sense but I think Carmy should've given it some time before trying to change the entire menu, and I'm sure it'll backfire on him later in the szn since i feel like he's using this as an excuse to run from shit in his life.

That was my whole thought this episode. Why not ramp it up and let people acclimate to the environment as you get new cooks and let Tina become used to being a sous for the first time in her life? It's also so expensive to constantly have new ingredients, it seems like could create a lot of unnecessary waste too if they don't fill up the tables one night.

This show got the most realistic interaction between characters in a dialogue that I've ever seen lmao in how a lot of them start their lines around the same time, no super dramatic pauses inbetween, and you can actually feel the tension in the room. To me it actually kind of feels almost like improv to be honest. Also i think that ending scene says a lot about Carmy because what he had as "non negotiables" aren't really unrealistic. They are in the sense that it feels "extra" but like the reality is he's the only person there with the level of experience or drive to reach the level they are trying to achieve. He can't really afford to let up. I think in the context of great athletes it would easier to understand i.e Kobe's work regiment probably felt the same way Carmy's idea does to other people but its what was required to reach the level he wanted to attain

I get Claire is boring or uninteresting to you, and that perhaps boils down to execution on behalf of the writers, but the *intent* is clear in that nobody within the series thinks Claire is milk toast or anything less than a good thing for Carmie. He’s self sabotaging something that everyone else in his life sees as a very good thing for him emotionally ally and mentally (sans perhaps Syd) and that’s the point we’re supposed to be focusing on and lamenting. 🤷🏽‍♂️

The other thing I'm wondering about is how would they accommodate food allergies or substitutions like Carmy did with Sydney's plate if they're changing the menu every day. Also while I know th food is amazing, if I were Sydney's dad I'd risk having my guts torn up by the wings because at least I know I'm gonna be full rather than eat a super small 165 plate of food that isn't meant to be re-heated and was made with stress and anxiety in every bite 😭😭😭 after a 12 hour shift

Dude, I literally tried to make this point to my friend when we watched it together. We literally kept repeating ourselves into a circle. His argument is that how would they get better if he doesn't push them, and that this is how the high level restaurants operate. I literally kept telling him they aren't ready yet, and that they needed time to get comfortable. I swear I love the guy, but he just is unwilling to see another viewpoint.

Comparing boring ass Claire that we barely saw to Felicity, a main character in the show, is wild. Those situations are incredibly different, because the build up for the Oliver/Felicity relationship was a whole season long.
