I think since all these characters are important to the story but were introduced in different episodes in the cartoon, they had to introduce them much earlier due to having a limited number of episodes. One Piece live action had to do the same thing so I am okay with changing the sequences as it keeps it fresh and new.

You're right, Jet and the others were in a forest with their own little hideout up in the trees. They had their own little arc and had nothing to do with Omashu whatsoever. As well as Theo and Sai being at an air temple, they also forgot to show the part where Aang opens up the secret door for air nomads and reveals nothing but Fire Nation weaponry - they're sort of tying all these arcs into one episode at a time.
