Monster (2004) is amazing, as is the manga, it's a great adaption of it. I think you were collecting the manga though so if you've started that it might not be too interesting for you. Potentially Ghost in the Shell: Stand Alone Complex? Though it might be complex as it is in the name, it is very interesting and exciting. And Gurren Lagann too as the other comments said.

I reccomend Code Geass (english dub isn't too bad either, subs are nice too!) Also it should be lelouch of the rebellion, I believe that other one is a movie

If you want to watch more 90s anime, Trigun and Outlaw Star are really fun shows with great dubs in the similar vein as Cowboy Bebop. Hellsing Ultimate is a great horror action series with a sense of humor if you're looking for something with good action. The dub for Hellsing Ultimate is also very good.

"cool new anime", not really, but I would really enjoy Violet Evergarden. Completely different from what you've done so far but I think you'd enjoy it. Otherwise I'd suggest Konosuba (a classic for reactors (people that do reacts, not the nuclear reactor thingy), very funny) and/or the devil is a part-timer (also very funny)

Monster is amazing, it's my favorite Anime, especially if you like Thriller. I think you would also like the anime "Bakuman".

theres a short series 12 episodes called megalobox that's really good. its a gutsy boxing anime that takes place in a dystopian world and they have mechanical gear that they use to box each other instead of the usual bare knuckle or boxing gloves.

These are all really great suggestions. I'd like to recommend Dr. Stone, Prison School, & Kaiji. Currently Dr. Stone just has 1 season out so far with 24 episodes with season 2 coming out next month, Jan 14, 2021. Very cool survival anime about science. Prison School is a short series with just 12 episodes. It's just the one season, but there can possibly be a season 2 at some point in the future, but season 1 wraps up pretty nicely. Prison School is very borderline NSFW, fair warning, also it's a comedy. Kaiji is drama/gambling anime, it gets pretty intense and shows the darker side of human nature.

I started Dr. STONE but it didn’t grab me. May return to it in the future. Prison School is on my schedule. Not sure when. But it looks cool. And Kaiji I have been hearing amazing things about. So will def take a look.
