Here are some of my favorite recipes for Litha and the Summer Solstice! What are your favorites and are you going to try any of these?

🍣Fiery Grilled Salmon from Patti Wigington🍣

In Celtic lore, the salmon is associated with knowledge. In fact, the first person to taste this delicious fish was granted all kinds of wisdom! At the summer solstice, certainly a time of fire, why not toss a salmon into the flame so you can partake of its vast knowledge? This simple dish can be prepared out on your grill to keep the kitchen cool, and tastes just as good cold the next day on top of a salad.

Ingredients:

2 lbs salmon fillets, skin on

1/4 C. soy sauce

1/4 C. Dijon mustard

1 tsp. cayenne pepper

3 cloves garlic, minced

1/4 C. olive oil

Preparation:

Combine the olive oil, soy sauce, Dijon mustard, garlic and cayenne pepper in a bowl and whisk together. Using a barbeque brush, brush half of the soy sauce mix onto the salmon fillets. Place them sauce-side down (skin-side up) on the grill for about six to seven minutes. Brush the remainder of the sauce onto the skin side, and use a large spatula to flip the fillets over. Grill for another five minutes or so and remove from heat. Allow the fillets to sit for about ten minutes before serving on a bed of your favorite greens and summer vegetables.

Note: A well cooked fish is one that isn't too dry. When you remove the salmon from the grill, it may seem undercooked in the center. However, once it sits for ten minutes, the heat in the juices will make it finish cooking. Don't cook salmon until it "looks cooked" in the middle, because by then it will dry out and lose its flavor.

🥦Grilled Vegetables from Learn Religions🥦

Few things symbolize the midsummer season like early vegetables -- peppers, onions, and even asparagus are delicious on the grill. During Litha, when we celebrate the power and energy of the sun, grilled vegetables are the perfect representation of that solar energy. After all, what's better than cooking with fire, like our ancestors did? Toss some veggies on the grill and dig in for your Litha sabbat celebration!

Ingredients:

4 bell peppers (your choice of colors)

2 onions

2 yellow squash

4 Portobello mushrooms

2 zucchini

A bunch of green onions

1/2 pound asparagus spears, trimmed

Olive oil

Salt and pepper

Balsamic vinegar to taste

3 cloves garlic, minced

Fresh rosemary

Oregano

Preparation:

Preheat a grilling pan over medium heat.

Wash and trim all vegetables. Cut the larger ones, like zucchini and eggplant, into slices. Place the veggies in a bowl, and drizzle olive oil on them. Shake the bowl so that all the vegetables are lightly coated with oil. Sprinkle with salt and pepper to taste.

Add vegetables to the grilling pan, and and grill them until they are tender. They should be lightly charred, which will take anywhere from 8 - 12 minutes. It's best to do this in small batches, unless you have a really big grilling pan.

While the vegetables are grilling, combine about 1/4 Cup olive oil with the balsamic vinegar, garlic, rosemary and oregano. Remove the veggies from the grill, place them in a bowl, and then add the herb and oil mix. Toss to coat them. Serve veggies warm with your Litha feast.

Note: Some vegetables tend to grill poorly, so be careful which ones you choose. Peppers, eggplant, asparagus, summer squash and onions all work well. Avoid veggies that are high in water content, like cucumbers, celery, or leafy greens.

🤑Give Me Money! Sun Tea by Star Crystal Healing🤑

Ingredients:

Sun tea for promoting financial wealth and abundance. You can make sun tea by placing your choice of tea out in the sun for a little while from 30 minutes to an hour. You don't want to leave it out all day because it can produce bacteria.

- Mint ice cubes (optional, freeze whole mint leaves into ice)

- 1 part Mint

- 1 part Chamomile

- ½ part Basil

Place your herbs in a jar and then steep in the sun. Add sweetener if desired and strain when you are ready to enjoy! Garnish with lemon.

🔮Magic Psychic Sun Tea by Star Crystal Healing🔮

Steep some dandelion and lemongrass for some psychic energy!

Ingredients:

- 1 part Lemongrass

- 1 part Dandelion flowers

- Pineapple juice

Follow the same basic steps for making a sun tea with lemongrass and dandelion flowers. Chill the tea and then add ½ part pineapple juice and garnish with pineapple.

☀️Yummy Sunny Smoothie from Raven and Crone☀️

Approx 5 lemon balm tea ice cubes ( if you can’t find this, sub basil)*

- 1.5 cups frozen Strawberry

- 2 cups watermelon

- 1 frozen banana (more banana =thicker smoothie)

- Sweetener, if desired, I personally used 3 small packs of stevia in the raw

*Lemon balm notes: If you have a super fancy blender that will totally blend the lemon balm then you can add a few leaves in with everything else. You could also make lemon balm tea and freeze them into ice cubes for your smoothie.

Add all ingredients to blender and sweeten to taste. Enjoy! You could probably make some yummy popsicles if you mix the smoothie with some coconut milk yogurt.

💜Lavender Mint Lemonade Cocktail by Spices in my DNA💜

This Lavender Mint Vodka Lemonade is a super easy, incredibly refreshing summer cocktail. It’s made with 5 simple ingredients: vodka, lemonade, lavender infused simple syrup, fresh mint, and soda water. It can be made into a pitcher-style cocktail for a crowd, too!

FOR THE COCKTAIL INGREDIENTS, WE’VE GOT:

- lavender simple syrup

- soda water

- lemonade

- vodka

- mint

- lemon slices

Seriously SO simple. I’d recommend using a really good quality, fresh lemonade (the kind with the pulp in it!), instead of that concentrated stuff. Fresh lemonade makes allll the difference here!

It all starts with the simplest (no pun intended) simple syrup! It’s infused with culinary lavender (if you’ve never cooked with it, it’s just dried lavender, and you can use it in things like desserts & drinks!) and this is the kind I use!

I usually just shake these up individually with a cocktail shaker, but you can 100% make them pitcher-style for a crowd too! You can just measure out all the ingredients in the quantities you need, stir everything together in a pitcher, and chill it until you’re ready to serve! (I’d save the soda water and the ice for the very end – just so it stays bubbly and doesn’t get watered down!)

Ingredients

For the cocktail

- 2 ounces vodka

- 4 ounces lemonade

- 1 1/2 ounces lavender simple syrup

- splash of club soda (1-2 ounces, or to taste)

- crushed ice

small handful of mint leaves

- lemon slices

For the lavender simple syrup

- 1 cup water

- 1 cup sugar

- 1 tablespoon culinary lavender

Instructions

Make the simple syrup. Bring the water, sugar, and lavender to a boil in a small saucepan. Boil for a minute or so until sugar is dissolved. Let cool completely, then strain and discard lavender.

To make the cocktail, add a small handful of torn mint leaves to a glass and fill the glass with crushed ice. Add a few ice cubes to a cocktail shaker. Add the vodka, lemonade, and lavender simple syrup. Shake for 30 seconds and pour into the glass. Top off with a splash of club soda and garnish with a lemon slice and a spring of fresh mint.

Recipe Notes:

*Make sure you're using good quality, fresh lemonade (the kind with the pulp in it!) It makes all the difference.

*You can omit the vodka to make this non-alcoholic!

*To make these pitcher-style for a crowd, I'd measure all of the cocktail ingredients out for how many people you want to make them for, add everything to a pitcher, and chill the mixture in the fridge. When you're ready to serve, add the soda water, crushed ice, some extra mint, lemon slices, and serve! (And you may need to double or triple the simple syrup depending on how many people you're making them for!)

🔥Red Fire Litha Sun Tea by Star Crystal Healing🔥

- Hibiscus flowers (check international markets to buy local)

- Cherry juice

- Orange slices

Make sun tea with hibiscus. You will know its ready when you have a beautiful deep red color! You could just drink the hibiscus plain, or follow the next steps.

Chill the hibiscus tea

Add cherry juice! Use a 2:1 ratio of hibiscus tea to cherry juice, or 2 parts hibiscus to 1 part cherry. You don’t have to follow this ratio exactly!

Garnish with orange slices

Safety considerations: The herbs in this post (basil, lemon balm, lemongrass, dandelion, and chamomile are all pretty safe food-grade herbs when used in small, reasonable amounts. Hibiscus is generally safe as well, but avoid it if you are on HRT or pregnant, or with high or low blood pressure. As always consult with your doctor before consuming any herbal medicines.

🍑Sun’s Up Peach Cobbler by Witch Unleashed🍑

Ingredients:

- 1-1lb 14oz can (3 ½ cups) halved peaches

- 3 slices slightly dry bread (toast on light)

- 1 tbs. cornstarch

- 1/4 cup butter or margarine, melted

- 1/4 tsp. salt

- 1/3 cup sugar

- 1 tbs. lemon juice

- 1/2 tsp. ground cinnamon

- 1/4 cup butter or margarine

- 1/4 tsp. ground nutmeg

Drain peaches, reserving 1 cup syrup. In a pan, combine cornstarch and salt and slowly blend in reserved syrup. Over med-high heat, cook and stir until mixture comes to a boil. Reduce heat and cook and stir for 2minutes. Add lemon juice, butter or margarine and peaches. Heat JUST to bubbling. Pour into 10x6x11/2 inch baking dish.

Cut bread lengthwise into 1 inch strips. Dip into ¼ cup melted butter, then into mixture of sugar, cinnamon, and nutmeg. Arrange over peaches. Bake at 375 degrees for 25 minutes or until toasty. Serve with cream (optional) Makes 6 servings.

🍑Sunny Solstice Peach Pie by Witch Unleashed🍑

You will need:

1 pie crust (unbaked)

4 cups slice peaches fresh

2 tsp. unbleached flour

1/4 cup peach preserves, with no added sugar in them.

1 tsp. freshly squeezed lemon juice

1/2 tsp. ground cinnamon

freshly grated nutmeg

dash of sea salt

Preheat oven to 400. In the unbaked crust of your choice arrange the peach slices in overlapping circles. Sprinkle the peaches with the flour Combine the peace preserves, lemon juice, cinnamon, nutmeg and dash of sea salt in saucepan and heat until hot while stirring. Pour this glaze over the peaches and bake for 10 minutes then turn the heat down to 375 and continue baking for an additional 30-35 minutes. May be served warm, at room temp or cold the decision is yours.

Traditional Pagan foods associated with The Litha Sabbat are fresh vegetables of all kinds and fresh fruits of yellow, orange, and red. Fresh fruit juice mixed with 7-Up compliments any meal. Since Litha is a time for the young and childlike play, the following recipes are geared towards teens preparing the meals. Here are some easy dishes that can be both fun and symbolic.

🍋Lemon Chess Pie by Edain McCoy🍋

Pie shell, but don't bake it yet

2 cups granulated sugar

1 tablespoon flour

1/2 teaspoon cornstarch

1 tablespoon cornmeal

4 eggs

1/4 cup milk

1/4 cup softened butter

1/2 cup lemon juice

1/4 cup grated lemon peel

Optional:

Second pie shell for covering

Orange slices for garnish at serving time

Preheat the oven to 375º F. Put the pie shell in a deep-dish pan. Mix the dry ingredients together, then add in the eggs, milk, butter, juice, and lemon peel. Beat until smooth. (You might need an electric mixer, but possibly not.) Pour into the pie shell and bake about 40 minutes until golden brown. Make sure that if you decide to use a second pie shell over the top, you seal it well around the edges (crimping the sides if desired!) and that you cut steam holes in the top layer so it doesn't explode! Top with orange slices for an added solar touch.

🍞Solstice Herb Bread🍞

3 C. flour

1 tbsp. sugar

1 tsp. salt

1 pkg. dry active yeast

2 tbsp. chopped fresh chives

2 tsp. chopped fresh rosemary

1 tsp. fresh thyme

1 1/4 C. hot water

2 tbsp. Crisco

Mix 2 cups of the flour, sugar, salt and yeast in a large bowl. Add herbs, water, and Crisco. Beat slowly, stirring in remaining cup of flour until smooth. Scrape batter from sides of bowl and let rise in a warm place for 35 minutes or until it doubles in bulk. Punch down and beat with a spoon for about 15 seconds. Place dough in a greased loaf pan, patting down and forming a loaf shape with your hands. Cover and let rise again for about 30 minutes or until it again

doubles in bulk. Bake at 375 for 40-45 minutes. Brush top with butter or margarine and remove from pan to cool.

🧚‍♀️Fairy Nectar🧚‍♀️

2 cups milk per serving

1 tsp. honey

1/2 tsp. vanilla extract

cinnamon

Warm milk, be careful not to boil it. In each mug add your honey and vanilla. Sprinkle with cinnamon.

🧚🏼Faery Honeycakes from Hearth and Home Witchery🧚🏼

1/2 cup sweet white wine

1 egg

2/3 cups flour

1/8 teaspoon cinnamon

1/8 teaspoon salt

2 tablespoons sugar

1 cup of honey

1/8 teaspoon of nutmeg

Oil for frying

Beat the wine and egg in a medium bowl. Combine the flour, cinnamon, salt and sugar in a small bowl. Stir into the egg mixture. Let stand 30 minutes. Combine the honey and nutmeg in a small bowl. Heat 1/2 inch of the oil in a frying pan until hot but don't let it get so hot it smokes!! Drop the batter into the oil 1 tablespoon at a time and fry until golden brown. Drain on paper towels. Dip into honey. Makes 1 1/2 dozen

🥗Fruit Salad🥗

Ingredients:

1 cup Mango

1/2 cup Pine Nuts (optional)

1 cup Pineapple, to be cut into bite-size chunks

1 cup Apple, to be cut into bite-size chunks

1 cup Peaches, to be cut into bite-size chunks

2 or 3 Bananas, to be sliced (depending on personal preference)

1 small jar Red Cherries

1/2 cup Coconut (if desired)

Take a 1/2 cup of Orange Juice and mix in 3 tbl. of pure maple syrup. Pour this over the fruit. This will keep the fruit from turning brown.

🌞Sun Salts by Healing Sun Witch🌞

These salts are super easy to make and are good for any sun magic, an offering to solar deities, solar bath salts, salt scrubs, cleansing, energy, positivity, healing, creativity, protection, and more 🌞

What you need:

- A mortar and pestle

- Sea salt

- Dried orange peel (and/or orange essential oil)

- Chamomile, marigold, sunflower, or any yellow petaled flower (dried)

- A dash of cinnamon powder

Instructions:

- Gather your ingredients

- Combine them one by one in a mortar and pestle until the salt changes color (yellow or orange) or until its powderized

- Let it charge in the sunlight (sunrise-sunset) with your favorite sun crystal

- Store in an airtight bottle and enjoy!

🧚‍♀️Faerie Sugar Recipe by Art Witch Path🧚‍♀️

Here’s an easy little offering you can make for the Fae. You can add to it if you’re feeling festive or just keep it simple.

Ingredients:

Sugar

Pure vanilla extract

Red food coloring

Rose petals *optional*

Small container

Instructions:

Start with your sugar, I used confectioners sugar here because my regular sugar was brown so it wouldn’t color correctly. Add in a bit of vanilla extract. Drop in red food coloring until you get a magickal pink color. Start with a little and add more as needed.

*Optional: add in sprinkles, stones, rose petals, flowers, bells, charms, etc.
