Sure, but if Luffy wasn't so undaunted, straightforward, with a powerful learning mindset, he wouldn't have earned Katakuri's respect enough for him to want to fight him fair and square. Any other schmo got hit by a dirt, he wouldn't have cared because the fight's outcome wouldn't have changed, However, he recognized that Luffy is both tough and an adept learner, which made him believe that he could not actually predict who would win. I think Luffy is written with far more than just plot armor, because even as a viewer/reader it's hard not to have a lot of respect for Luffy. He's as real as it gets.

Also, I noticed that (around 7:50) Katakuri had foreseen Luffy using conqueror’s haki and then decided to use his own conqueror’s at the same time. You could see the visual cue when his eyes turned red just before their hakis “collided”.

That was a clash of Armament Haki with both Conqueror's Haki users, like what Whitebeard and Shanks did back then. This is different clash, it is pure Conqueror's Haki only
