You're right about her "redoing it in her head". This episode is about her diving into escapism. Even though some things change for the better you can see somethings don't change at all, Eren's nature, and other things are worse because the timeline changed. Like her not being there to help Eren and Armin fight off the bullies, etc. In fact, that's what's why she paused like that in that episode as she was about to give up. And the mirror man has a bit more symbolism then what is shown in this OVA but you gotta finish the entire series.
