The chef at the beginning of the episode teaching Carmy how to truss a chicken was Thomas Keller - the real owner and executive chef of The French Laundry. He's the only American chef in the world to simultaneously own and operate two Michelin three star restaurants - The French Laundry in Napa, and Per Se in New York City. There are only 13 restaurants in the entire country that have three Michelin stars, and this chef owns two of them.
