If you still wanted to know Tre, the anime covers up to chapter 58 of the Tokyo Ghoul re manga.

the hair color change just shows that the personality changed, aside from what color it is, still symbolizes the same thing, but i think they turned it into black to symbolize that he isn't sasaki anymore nor the white haired kaneki, yet somehow more uhm "kanekier" LOL guess we'll have to wait and see

Yeah, Kaneki was the one whose mom worked herself to death trying to provide both for herself and Kaneki as well as her sister that kept asking for money. It's implied that those rose tinted memories of his mother were the result of Kaneki repressing all the abuse she inflicted on him because she was so stressed out by that kind of lifestyle. There was actually a brilliant bit of foreshadowing for that in the manga. During the fight with Arima that was never adapted in the anime, Arima directly damaged Kaneki's brain, which was alluded to in the flashback with Arima pointing his weapon at Kaneki's eye. During the trauma right after it happened, Kaneki had a conversation with his younger self and asked him if he loved his mother. They had established early on that Kaneki's tell is to touch his chin when he's lying, and the young Kaneki did that when he said he loved his mother. Most people didn't realize it or think much of it at the time. It wasn't until 56 chapters later that this happens and they revealed the reason he was lying is because his mother abused him.

One thing that you may have missed is Kanae real name is Karren, she was pretending to be a male for the sake of her family's honor. A lot is skipped over in the 3 season of the anime so if you want to a make sure you didn't miss any thing it is best to read the manga starting from chapter 1. Next season a lot of things going to happen.
